1 bottle fruity Pinot Noir
2 tablespoons peppercorns
2 tablespoons shallot -- minced
1 cup cream
2 quarts strawberries
1 quart water
1 cup superfine sugar (1to 2 cups)
1/2 cup lemon juice
1 cup balsamic vinegar
salt and pepper -- to taste
Reduce wine by 2/3 with peppercorns and shallots. Make simple syrup (boil
water with sugar); pour over stemmed berries. Add lemon juice. Blend all
till smooth. Add reserved wine, cream & vinegar. Adjust seasonings. Chill
