Island Inn Crab Cakes

This recipe is from the Island Inn in Ocracoke,
NC in the Outer Banks. Ocracoke was once the
headquarters of Blackbeard the pirate. These
are served in the Inn's restaurant.

Island Inn Crab Cakes

2 lbs. Lump crab meat
½ cup onion, chopped
½ t. Old Bay Seafood Seasoning
2 eggs, beaten
1 t. dry mustard
3 T. Mayonnaise
1 t. parsley flakes
1 c. bread crumbs
oil for frying
lemon wedges
Mix all ingredients, adding bread crumbs last.
Pat into small cakes and
fry until done and lightly browned on both
sides. Serve immediately with lemon
wedges if desired.
