Mozzarella and Asparagus Stuffed Shrimp

30 jumbo shrimp
30 asparagus, steamed
30 mozzarella, sliced
30 pancetta, sliced
3/4 cup butter, melted
1/4 cup lemon juice
1/4 cup white wine
1/2 cup bread crumbs
To taste, black pepper
1/4 cup romano cheese
Recipe
Pre-heat an oven to 450 degrees. Peel and butterfly the shrimp. Place a piece of asparagus
and mozzarella in the shrimp and wrap with pancetta.
Lay the shrimp in a baking pan and top with the butter, wine, and lemon. Sprinkle with bread
crumbs, romano cheese, and black pepper. Bake for 12 minutes and top with the pan
drippings.
