Mr. Delicious' Creole File Gumbo

Mr. Delicious' Creole File Gumbo
Makes about 18 cups, 12 servings
Preparation time: 15-20 minutes
Cooking time: about 1 1/2 hours
As tested at home, this recipe makes a thin, not-too-spicy gumbo. If
you like yours thicker, cook longer before adding the chicken,
oysters and shrimp. And if you like it hotter, add hot red pepper
sauce or cayenne pepper to taste.
3 quarts water
1/2 cup (1 stick) butter
1/2 cup all-purpose flour
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/4 cup fresh thyme
2 tomatoes, diced
2 cups sliced okra
1 tablespoon salt
1 teaspoon ground white pepper
1/4 teaspoon crushed red pepper flakes
4 whole bay leaves
1 pound smoked sausage, sliced
1 pound shrimp, peeled and deveined
1 pound diced boneless chicken
1 cup oysters, with their liquor
4 teaspoons file powder
In a large Dutch oven or stockpot, bring the water to a boil over
high heat. Meanwhile, in a small, heavy skillet, combine the butter
and flour over medium-high heat. Cook, stirring constantly, until the
mixture is a deep caramel color, about 10 to 15 minutes. Very
carefully, using a towel to cover your hand and arm, slowly add the
flour-butter roux to the boiling water. Be careful, as this will
splatter. Then add the onions, bell pepper, thyme, tomatoes, okra,
salt, white pepper, red pepper flakes, bay leaves and sausage. Return
the mixture to a boil, reduce heat to maintain a simmer and cook for
30 minutes. Add the shrimp, chicken and oysters and cook for an
additional 30 to 45 minutes. Stir in the file powder. Serve at once
over white rice.
Per serving (without rice): 323 calories (percent of calories from
fat, 61), 24 grams protein, 7 grams carbohydrates, 1 gram fiber, 22
grams fat, 138 milligrams cholesterol, 1,190 milligrams sodium.
