    Neiman Marcus Popovers

    List of Ingredients




    submitted by a Neiman-Marcus spokesperson, Georgia Christiansen

    3 large eggs
    1 1/4 cups room temperature milk
    1 1/4 cups all-purpose flour
    pinch of salt
    oil or shortening, for preparing popover tins

    Pre-heat oven to 450F.

    Beat eggs by hand with a wire whisk or rotary egg beater until lemon-colored and foamy. Add milk and stir in until well-blended, but do not overbeat. Add flour and salt all at once. Beat by hand until foamy and smooth on top. Grease popover tins lightly with shortening, but well. Pour popover batter into a pitcher and fill every other popover hole with batter (so that when the popovers rise, they will not touch each other). Bake for 15 minutes, then reduce heat to 350F and bake for 30 minutes longer. When ready to serve, remove popovers from the popover tins with a sharp knife and serve hot.
