    3 Tbs. butter
    1/4 cup flour
    2 cups heavy cream
    2 ounces Parmesan cheese, grated
    2 Tbs. Sherry
    1/2 tsp Paprika
    2 cups backfin crabmeat
    1 cup cooked, peeled and deveined shrimp
    1 1/2 cups onion-garlic croutons
    1/2 cup parsley sprigs
    4 Tbs Butter, melted


    Recipe



    Preheat oven to 350 degrees. Melt butter in pan. Remove from heat and whisk in flour. Add 1 1/2 cups of cream; whisk well. Return to heat and add cheese, continuing to stir until creamy. Remove from heat, adding remaining cream. Stir in Sherry, paprika and seafood. Spoon into 6 large shell-shaped baking dishes. In food processor, blend croutons and parsley. Sprinkle over seafood mixture. Top with melted butter. Refrigerate until needed. Bake at 350 degrees for 20 minutes or until top is browned and bubbly.
    Serve accompanied be a green salad.
    Makes 6 servings.
