Old-Fashioned Swiss Steak

Old-Fashioned Swiss Steak
(New Waskom Cafe, Waskom)
1 round steak
Sauce:
1 can tomato sauce
1/4 cup flour
1 piece celery, chopped fine
1/4 medium bell pepper
1 small onion, chopped fine
1 small button garlic (optional)
Cut steak in serving pieces. Flour, salt and pepper steak, and brown in
small amount of shortening. Brown onions, celery, pepper and garlic in
fat from steak. Drain off any fat in skillet, then add flour, tomato sauce and 2 cups hot water. Cook in a 325-degree oven for 1 1/2 hours.
