    Oven Puff Pancake

    Oven Puff Pancake
    from Mary Workman, The Inn at Burwell Place

    1 cup whole milk
    4 whole eggs
    1 TBSP vanilla
    1/8 tsp salt
    1 tablespoon sugar
    1 cup all purpose flour (not self-rising)

    FOR LOW FAT VERSION: Substitute 1% milk for whole milk and change the
    four eggs to 1 whole egg, and three egg whites.

    Preheat Oven to 375°. Spray Oven-proof 10" Skillet with Vegetable
    Shortening. Add 1 TBSP butter to skillet (not margarine.) Place in
    oven for two minutes.

    Mix together milk and eggs until smooth. Mix in Vanilla, salt and
    sugar until smooth. Add in flour and mix until smooth. Pour into hot
    skillet and bake approximately 25 to 30 minutes or until golden brown.

    Top with your choice of fruits, and sprinkle with confectioners sugar
    and SERVE IMMEDIATELY.
