    Black-Eyed Pea and Cornbread Salad

    List of Ingredients




    1/2 skillet cornbread (about 3 cups)
    8 slices bacon, cooked crisp and crumbled
    6 green onions, chopped
    1/2 cup mayonnaise (Hellman's, of course!)
    1 cup black-eyed peas
    2 eggs, hard-boiled, chopped
    1/2 green bell pepper, chopped
    1/2 red bell pepper, chopped
    1 large tomato, chopped

    Crumble cornbread into large bowl; add remaining ingredients.
    Mix well.
    Refrigerate until ready to serve.
