Carol Rhodes Cornbread Salad
List of Ingredients
Bake a small box of cornbread (like Jiffy).
Meanwhile cook 1 lb bacon.
Layer in a 9X13 pan:
1 box cornbread, baked and crumbled
1 can (15 oz.) red or kidney beans
1 C chopped tomatoes
1 C chopped green onion
Some green pepper, diced
1 pound bacon, crumbled
Dressing:
Mix:
1 1/2 C Miracle Whip (I use mayo.)
3/4 C sweet pickle juice
Pour over pan and let stand overnight. Recipe
