Individual Frozen Fruit Salads
1 8-ounce package cream cheese, softened
1 cup mayonnaise
1 cup heavy cream, whipped
1/2 cup mashed bananas
1 Tablespoon lemon juice
1 8-ounce can pineapple tidbits
2 1/2 cups peeled and chopped apple
2/3 cup chopped celery
2/3 cup seeded green grapes
2/3 cup chopped walnuts
Blend cream cheese with mayonnaise. Fold in whipped cream and set
aside. Drain pineapple reserving liquid in a small bowl. Let the
chopped apple set in reserved liquid while making other preparations
(mashing banana, chopping celery, etc.) Stir the lemon juice into the
mashed banana. Drain the apple. Fold bananas, pineapple, apple,
celery, grapes, and walnuts, into whipped cream mixture. Spoon salad
into paper lined muffin cups and place in the freezer until solid.
When frozen, place individual salads into large zip lock bag(s). Will
keep in the freezer for four to six weeks. To serve remove salads
from zip lock bag and let stand at room temperature for 10 to 15
