Just A Good Salad
List of Ingredients
1 head iceberg lettuce
1/2 fresh lemon
3 large ripe tomatoes
1 seedless cucumber
2 large red onions
1/2 cup black oil cured olives
1/2 tsp. oregano
freshly ground pepper to taste
salt, if desired
Recipe
Cut the lettuce in half. Run a cut lemon over the slicing knife to help prevent the lettuce from turning brown. Lay half the lettuce on its side and cut in thin strips as you
would for cole slaw, alternately running lemon over the blade. Repeat with the other half. Dice the tomatoes and the cucumber. Cut the onions in half, lay them on the flat
side, and slice very thinly. Slice the olives. Toss all in a large chilled bowl with oregano and fresh pepper, and salt if desired.
Have a few salad dressings on hand so guests can have a choice, or toss with an All-Purpose Vinaigrette Salad Dressing.
