Onion Salad
List of Ingredients
For the onions:
4 large onions, sliced
4 tablespoons extra-virgin olive oil
salt to taste
For the seasoning:
1/4 cup fresh parsley leaves
1/2 cup grated Parmigiano Reggiano
1/4 cup kosher salt
1/4 cup extra-virgin olive oil
3 tablespoons lemon juice
For the croutons:
2 slices Tuscan bread
1 clove garlic
2 tablespoons extra-virgin olive oil

Recipe
Brush the onions with the olive oil and season with salt. Place the onions on a medium-hot grill. Grill on each side for 12-15 minutes until the onions begin to caramelize. Remove and set aside to cool. Separate the onion slices into rings. Place 1/2 of the onions on a platter, and sprinkle with parsley. Spread 1/2 of the parmigiano over the onions. Repeat with the layering with the remaining ingredients. Drizzle with olive oil and lemon juice. Grill the bread, rub with the garlic, and sprinkle with salt and olive oil. Cut into croutons. Garnish the salad with the croutons.
