    List of Ingredients




    Singapore Chicken and Black Bean Salad
    3/4 cup picante sauce
    1/2 cup rice vinegar or white vinegar
    2 tablespoons peanut butter
    1 clove garlic, peeled or 1/8 teaspoon garlic
    powder
    6 cups salad greens torn in bite-size pieces
    1/2 cup fresh cilantro leaves
    1 can (15 ounces) black beans, drained and rinsed
    2 green onions, sliced (about 1/4 cup)
    2 cups cooked chicken strips
    1 large green or red pepper, cut into 1/4-inch
    rings

    In blender or food processor place picante sauce,
    vinegar, peanut butter and garlic. Cover and blend
    until smooth. Reserve 1/2 cup of picante sauce
    mixture.
    In large bowl, toss salad greens, cilantro, beans,
    onions, and reserved picante sauce mixture until
    evenly coated.
    Divide greens mixture among four plates.
    Arrange chicken and pepper on top. Serve with
    remaining dressing. Serves four.
