Smoked Chicken Salad with two dressings

Cafe Orleans
Disneyland
In a salad bowl, combine (no amounts given):
Salad greens
Radicchio
Romaine
Vegetables
Celery
Jicama
Cherry tomatoes
Fruits
Orange slices
Apple pieces
Top salad mix with smoked chicken breast pieces and garnish with walnuts and fresh chives. Serve with ginger honey-mustard dressing.
Recipe
Ginger Honey-Mustard Dressing
3 oz ginger root
2 oz pasteurized egg substitute, such as Egg Beaters* [or pasturized eggs]
1 1/8 oz honey
18 oz olive oil
1 oz dijon mustard
4 oz apple cider
1/2 oz salt
1/3 oz pepper
Juice of three limes
Blend all ingredients together. Makes 1 quart.
* The original recipe called for 2 raw egg yolks. Due to the danger of salmonella, the recipe has been modified to include a safe egg substitute. Pasturized eggs are safe to use instead of egg subsitute. They are available in stores.

HAWAIIAN GINGER DRESSING
7 tbsp. Regina red wine vinegar
5 tbsp. salad oil
3 tbsp. cut up, peeled fresh ginger
1 tsp. garlic salt
8 tbsp. crushed pineapple
3 tbsp. sugar
1/8 tsp. M.S.G., if desired
In a blender, combine vinegar, oil and fresh ginger. Blend well on high speed (15 seconds). Add salt, pineapple, sugar and M.S.G., if used. Blend for another 15 seconds. Refrigerate any unused portion.
Yield: 1 1/2 cups.
