Vince's Taffy Apple Salad

List of Ingredients




1 Tablespoon all purpose flour
1/2 cup sugar
1 Egg
2 Tablespoons Apple Cider Vinegar
1 can (20 ounce)*** crushed pineapple, drained ( reserve Juice)

4 Cups diced Red Delicious Apples, Unpeeled
1 Cup peanuts, salted if desired
1 8 ounce carton Cool Whip
Additional Peanuts for garnish, optional
*** you can use a smaller can of pineapple if you want less pineapple in the salad. I like pineapple so I use the larger can, plus the additional juice makes for more dressing.

Combine flour and sugar; mix well. In a small pan beat egg and add flour/sugar mixture. Add vinegar and reserved pineapple juice. Stir and cook over low heat until thick. Cool. Combine apples,pineapple and peanuts in a bowl. Pour cooled dressing over apples. Add cool whip; mix well.
Garnish with additional peanuts and chill.
