    Virginia Country Potato Salad

    List of Ingredients




    Virginia Country Potato Salad

    5 pounds potatoes, boiled peeled and cubed
    1 large onion, chopped
    3 stalks celery ribs, chopped
    6 eggs, hard boiled, peeled and chopped
    1/4 cup bread and butter pickles, chopped
    1/4 cup juice from pickles
    1 cup mayonnaise

    Place all ingredients in a large bowl except mayonnaise. Allow to stand for 15 to 30 minutes for flavors to blend. Stir in mayonnaise until mixture reaches
    desired consistency, adding more if needed.
