B.B.Q. Vegetable Pitas
List of Ingredients
3 Tablespoons canola oil
3 Small onions -- thinly sliced
1/2 Cup barbecue sauce
1 Cup diced red pepper
2 avocados, peeled -- seeded and mashed
2 Cups grated Mozzarella
6 pitas -- sliced in half
In small saucepan, saute onions in oil. Cook for 5 minutes and stir in
barbecue sauce. Divide mashed avocado and Mozzarella evenly between
pita halves. Distribute onions and red peppers in pitas and serve
immediately. Serves 12.
