Fran's Mom's Tomato Sauce
Fran Scibelli's simple family recipe is a staple at the restaurant.
1 to 2 tablespoons olive oil
4 to 5 cloves garlic
Large can Italian-style plum tomatoes
Salt to taste
About 2 tablespoons chopped fresh parsley
About 2 tablespoons chopped fresh basil
Coat bottom of saucepan with olive oil. Peel garlic cloves and crush
with back of knife. Saute garlic in oil until golden (don't let it
burn).
Place tomatoes in blender and pulse several times to crush lightly.
Add to pot and simmer 30 minutes. Taste and add salt. Add a heavy
palmful of parsley and basil and cook a few more minutes to blend
flavors. Refrigerate until ready to use. Reheats well.
