    Hot Trinidad Pepper Sauce

    1/2 Pound Scotch Bonnet Peppers -- Seeded And Minced
    2 Large Mangos -- Peeled And Crushed
    1 Cup Prepared Mustard
    1/4 Cup Light Brown Sugar -- Packed
    1/4 Cup White Wine Vinegar
    1 Tbl Curry Powder
    1 Tbl Ground Cumin
    1 Tbl Chili Powder
    1/2 Teaspoon Salt
    1 Teaspoon Black Pepper -- Freshly Ground
    2 Cloves Garlic -- Minced
    1 Tablespoon White Sugar

    Recipe



    Combine all ingredients in a Blender Jar, or Food Processor and process, Pulsating, only until you have a nice thick yellow mustard sauce.

    to store - decant this sauce into glass screw top sauce bottles, or even old half pint whisky bottles like it's sold in the caribbean.


    NOTES : AGAIN " This Sauce is EXTREMELY - HOT !!!"* Warning Habanero's are the Hottest Peppers in the Entire World.Wear Kitchen Gloves, and Be Very Careful when preparing the peppers,to keep your hands away from your face, before a thorough washing with lots of soap and water and a rinse in White Vinegar, to remove the lingering capsium juices. always cover the blender or food processor thoroughly before blending any peppers and open the jar cover pointed away from your face -Always.

    [Phil's note even that is not an assurance that you have it all off. Be careful. One day I somehow got some under the nails which until I rubbed around the eye I didn't know was there.. OUCH The washing and rinse had toned it down but it still wasn't fun.]

    My Catering Clients put in their orders for this sauce in a lottery form,since I only produce one Gallon per year and each person is only able to purchase one bottle per year. that way I always have a market, since I know the sauce won't kill them in that small of a quantity, over that long time peroid. a few lucky folks have received this sauce in care packages and gift baskets from me, and they always say the same thing, "Man This stuff is like Napalm, You need a Skull and Crossbones on it.
