Red Eye Gravy [and Tomato Gravy]

I hope you have a black iron skillet, because that is a must for red eye gravy....cook country ham slices , 1 TBS oil per slice. When done remove ham and scrape bottom of skillet real good, add flour to these dripping, enough flour to make a paste. Stir well season to taste adding a little paprika for color. Add water to desired thickness and serve with GRITS> and your ham slices. To make a Tomato Gravy, follow
same recipe adding a can of tomato sauce, and enough water to desired thickness.
