    Cousin Paula's Soup

    List of Ingredients




    8 ounces kale
    8 ounces mushrooms
    4 medium red potatoes
    2 quarts chicken stock
    1 clove garlic, peeled
    2 tsp. summer savory
    1 tsp. marjoram
    juice of 1 lemon
    1 tsp. Dijon mustard
    freshly ground pepper to taste
    salt, if desired




    Recipe



    Wash and coarsely chop the kale. Cut the mushrooms and potatoes into small pieces. Bring the chicken stock to a boil, then add the kale, potatoes, mushrooms, and
    all seasonings.
    When the vegetables are tender, about 15 minutes, remove them to a food processor or blender and puree. Return the puree to the stock and mix well. Serve hot.

    Serves 8 to 10
