    Creamy Mushroom Soup

    1/4 cup olive oil
    1 cup diced onions
    1 cup diced celery
    3/4 pound fresh white mushrooms, cut in halves
    11/2 quarts half and half
    11/2 quarts chicken broth
    Salt, pepper
    2 tablespoons fresh chopped parsley

    Heat oil in deep saucepan. Add onions and celery. Sauté until tender.
    Add mushrooms and sauté over low heat 4 minutes. Add half and half
    and chicken broth. Reduce soup by1/2 or until creamy.

    Season to taste with salt and pepper. Puree in blender until smooth.
    Serve garnished with chopped parsley.

    Yield: Makes 6 to 8 servings.
