    Hill Country Cabbage Soup

    List of Ingredients




    Hill Country Cabbage Soup
    1 1/2 cups shredded green cabbage
    1/2 cup water
    2 tablespoons chopped onion
    1/4 teaspoon caraway seeds
    2 tablespoons butter or margarine
    1 can (10 3/4 ounces) condensed cream of potato soup
    Generous dash of pepper
    1 soup can of milk

    In saucepan, cook cabbage, water and onion with caraway seeds in melted butter until tender, approximately ten minutes. Add soup and pepper. Pour cabbage mixture into electric blender or food processor: blend until smooth.

    Return mixture to saucepan: gradually stir in milk. Heat and stir occasionally. Thin to desired consistency by adding milk. Garnish with parsley if desired. Makes approximately three cups.
