    More for Less Vegetable Soup

    List of Ingredients




    14 1/4 oz. can no-salt-added French-style green beans, drained
    8 1/4 oz. can no-salt-added peas, drained
    8 3/4 oz. can no-salt-added corn, drained
    14 1/4 oz. can diced tomatoes
    1 small onion, chopped
    3 carrots, peeled and diced
    2 stalks celery, diced
    1/4 teaspoon black pepper
    8 cups low-sodium chicken bouillon
    8 oz. bag of chopped cabbage
    2 cups shredded, cooked chicken breast, optional
    1 cup cooked brown rice
    1 tablespoon chopped dried parsley

    Combine first seven ingredients, pepper and bouillon in large
    stock pot; bring slowly to a boil. Reduce heat and simmer
    uncovered one hour, or until vegetables are tender. Add
    cabbage, chicken, rice and parsley; simmer 20 minutes.

    Nutrient information: Sodium 136 mg., fat 3 gm., protein
    10 gms., calories 123 - these for a 1 cup serving.
