    No Roux Gumbo

    List of Ingredients





    3 slices bacon
    2 large onions, chopped
    2 green bell peppers, chopped
    3 ribs celery, chopped
    2 pounds shrimp
    1 can (6.5 ounce) crab meat
    4 tblsp flour
    1 (1 pound) can tomatoes, chopped
    2 cups sliced okra, canned, fresh or frozen
    1 cup chopped ham, or to taste
    6 tblps gumbo file, or to taste

    In a large Dutch oven, fry bacon until crisp. Drain, crumble and set aside. Add onions and green pepper and brown slightly in the bacon drippings. Blend in the flour. Add tomatoes, okra, celery and ham. Fill Dutch oven 2/3 full of water and cook over low heat for 2 hours. Thirty minutes before serving, add shrimp, crab and gumbo file. Blend file into mixture well and serve immediately over hot rice.
