    Asparagus Opera Patties

    List of Ingredients




    1 pound asparagus, trimmed
    2 eggs, beaten
    1/3 cup fine plain bread crumbs
    1/4 cup grated Parmesan cheese
    1 tsp. dried parsley
    2 Tbsp. extra virgin olive oil
    TOMATO BASIL MAYONNAISE

    Recipe




    Cook asparagus in a pot of boiling water until soft, about 10 minutes. Remove and cut into small pieces or mash. Combine asparagus and all remaining ingredients
    except olive oil and mayonaise in a medium bowl and mix well. Form into 16 patties.
    Heat oil in a large skillet over medium heat. Arrange patties in hot oil and cook 1 to 2 minutes on each side or until browned. Serve warm or at room temperature with Tomato Basil Mayonnaise.
