    Ciao's Scary Carrots

    List of Ingredients




    "Wow, what can I say? It's only carrots, yet this dish tastes so good, it's scary!"

    1 pound organic carrots
    1 cup water
    1 Tbsp. butter
    1/2 tsp. freshly grated gingerroot
    1 tsp. fresh lemon juice
    1 tsp. chopped fresh tarragon



    Recipe




    Peel and trim carrots. Cut crosswise into 1-inch-thick slices, and steam in a medium saucepan over boiling water until tender, about 10 minutes. Spoon carrots into a serving dish. In a separate saucepan, melt butter over medium heat. Add gingerroot, lemon juice and tarragon. Cook 1 minute,then pour over carrots. Serve immediately.

    Makes 6 to 8 servings
