GARLIC GREENS
1 pound mixed braising greens, such as mustard greens, spinach, beet
greens, turnip greens, kale and/or chard
2 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon fresh lemon juice
Kosher salt
Freshly ground black pepper
Remove and discard thickest stems from greens. Tear greens into
manageable pieces. Rinse greens in several changes of water to remove
any grit. Dry in a salad spinner.
Heat olive oil in a nonreactive 10-inch skillet over medium-high
heat; add garlic. Add greens and cook, tossing them so that they cook
evenly, just until they wilt but keep their resilient texture. Add
lemon juice, season to taste with salt and pepper. Drain off any
excess liquid and serve.
Yield: 4 servings.
