Italian seasoning to taste
Cayenne Pepper to taste
Cajun seasoning to taste
Greek seasoning to taste

Note when adding one of the above seasonings I mix a little cornmeal in with the flour. Just seems better for some reason. In Frying with sausage use veg oil instead of bacon grease. The sausage will act as the bacon grease did.
