Pickled Onion Rings

1/2 large sweet onion
Boiling water
1/2 cup white vinegar
1/2 cup water
1/4 cup sugar
1/4 tsp salt
2 drops hot pepper sauce
Recipe
Cut onion into thin slices and separate into rings. Put into a two cup sterilized jar. Pour boiling water over to cover onions and allow to cool. Drain.
Mix together the vinegar, water, sugar, salt and hot pepper sauce and bring to a boil. Pour over onion rings. Cover tightly and refrigerate. Wait for 2 days before using. These can be stored in the refrigerator for up to 2 months.
These are good with hamburgers, cheese sandwiches, egg salad sandwiches and as a pickle with regular meals.
