    Chicharrone de Pollo Wings

    (Dragon Wings)
    Puerto Rican Style chicken recipe applied to capon wings for their size and flavor.

    MARINADE:
    1 head garlic, peeled and minced
    2 tablespoons garlic powder
    2 teaspoons salt
    3 teaspoons onion powder
    3 teaspoons black pepper, ground
    2 tablespoons sweet paprika
    3 teaspoons oregano, dried
    2 tablespoons coriander seeds, ground
    3 teaspoons annatto seed, ground
    1/3 cup white wine vinegar
    1 whole 5oz. bottle Bandana's XXtra Serious Pepper Sauce
    1/2 cup extra virgin olive oil
    1/2 cup chicken stock, homemade preferred
    5 limes, juiced
    oil, for frying
    5 pounds chicken wings, large capon

    Recipe



    Puree first group in blender and use to marinate wings in fridge overnight.Place in uncovered,ungreased baking dish and bake at 400 degreesfor 20 minutes basting once. remove from oven and deep fry for 2-3 minutes till crunchy.

    (OPTIONAL)
    Serve with Moors y Christians (black beans and white rice) and an dipping sauce.
