Fruity Chicken Wings
List of Ingredients
12 chicken wings
3 tbsp flour mixed with 1 tbsp curry powder
3 tbsp oil
2 onions, sliced
12 new potatoes, scrubbed
8 fl oz chicken stock
8 fl oz apple juice or cider
4 fl oz lemon juice
4 fl oz honey
7 oz dried apricots
3 oz dried apples, chopped
3 oz prunes, pitted
12 black olives
1 tbsp fresh lemon thyme, chopped
Recipe
Lightly coat chicken wings with flour mixture and curry powder. Heat oil in a large saucepan and cook chicken wings for 8 minutes or until golden. Drain on paper towels
Add onions and potatoes to pan. Cook over low heat for 5 minutes. Stir in stock, juices and honey. Return chicken to pan and add dried fruit. Bring mixture to boil, then simmer, covered, for 20 minutes or until chicken is tender. Stir in olives and thyme.
