Orange & Habanero Wings
List of Ingredients
2 kg Chicken wings
Marinade:
2 dl Orange juice concentrate
2 dl Soy sauce (Kikkoman or other Japanese)
1 dl Tomato purée
0,5 dl Habanero juice (fresh)
6 cloves Garlic
1 tb Liquid Smoke
2 tb Thyme (fresh)
2 tb Dark Rum
1 dl Olive oilRecipe
Remove the stems from the habanero (100 g) and use a juicemaker
to make fresh habanero juice.
Mix all marinade ingredients in a food processor (with the
steel blade) and cover the wings with marinade.
Marinate the wings for 6 - 12 hours.
Grill the wings until the skin gets crispy but not burnt.
