    Peppermint Chicken Wings

    List of Ingredients

    12 large chicken wings
    salt
    1 fresh jalapeno chile, seeded and minced
    2 cloves garlic, minced
    4 Tbsp. finely chopped fresh mint leaves
    1 (6 oz.) can tomato puree
    2 Tbsp. orange or lemon juice
    1/2 cup water

    HORSERADISH MARINADE
    1 tsp. Johnny Ciao's BarBQ Blues (or1/2 tsp. paprika and 1/2 tsp. chile powder)
    1 Tbsp. chopped fresh thyme leaves
    1 tsp. Johnny Ciao's Jazzy Pepper (or 1 tsp. coarse black pepper)
    1/2 tsp. white wine vinegar
    1 tsp. olive oil
    1 1/2 Tbsp. plain nonfat yogurt
    2 Tbsp. horseradish




    Recipe


    Rinse chicken under cold running water and pat dry with paper towels. Sprinkle salt over chicken and let stand 30 minutes.
    Stir together chile, garlic, mint, tomato puree and citrus juice in a medium bowl. Add chicken to bowl and turn to coat chicken. Let marinate 15 to 30 minutes, turning
    several times.
    Preheat oven to 400F (205C). Place wings and marinade in a baking dish. Pour water around, not over, chicken. Cover and bake 20 minutes. Remove lid and broil on each
    side 10 minutes. Enjoy while hot or cold. Serve with Horseradish Marinade, if desired.

    Makes 6 servings

    Horseradish Marinade
    Mix all ingredients together in the bowl to be used for marinating the meat.
    Use as a marinade for steaks, pork chops, chicken breasts and other cuts of meat.
    Makes enough for 1 pound of meat
