    Three Mustard BBQ Sauce

    List of Ingredients




    2 tbs vegetable oil
    3 celery ribs, fine diced
    1 red bell pepper, seeded and finely diced
    1 green bell pepper, seeded and fine diced
    1 yellow bell pepper, seeded and fine diced
    1 onion fine diced
    1 clove garlic minced fine
    2 cup firm packed brown sugar
    1 cup whole grain mustard
    1 cup dijon-style mustard
    1 cup prepared yellow mustard
    2 tbs worcestershire sauce
    1/2 of fresh lemon's juice
    1 tbs ground ginger
    1 tsp chili powder
    1 tsp cayenne pepper
    fresh ground black pepper
    salt

    Recipe
    Heat oil in large saucepan over med heat. Add celery, peppers, onion, garlic and cook until the vegetables are slightly softened, 3 to 5 minutes. Add brown sugar and stir until sugar is dissolved. Stir in the mustards and reduce heat to low. Simmer for 10 minutes, stirring occasionally. Add remaining ingredients except for salt and pepper and simmer 10 minutes longer, stir frequently. Taste and check for salt and pepper. Let cool. Place in airtight container anf refrigerate. keeps several months.

    Let chicken soak at least 2 hours in sauce before baking or BBQing.
