Uncle Bubba's Lime Chicken Wings
List of Ingredients
20 chicken wings
1/4 cup chopped fresh parsley
1/4 tsp ground black pepper
1/4 tsp ground white pepper
1/2 tsp crated lime rind
1 cup chardonney
2 tbsp lime juice Recipe
For Uncle Bubba's culinary delight, divide the chicken wings at the joints and throw the tips away. This will leave you with a 2-bone wing piece and a drumette for each original "wing". Cut off as much skin as you can to make this a healthier dish, just like Aunt Irma would, then combine all of the ingredients in a dish. Add the wings, making sure that they're covered, and marinate overnight. When you're ready to grill them, be sure to save the marinade.
Grill the wings on the low side of the fire, that is, after the flames have died down. Brush marinade on each one while they're cooking, turning every 5 minutes until done. Aunt Irma places them on a platter that's garnished with lime slices, but my uncle just hands them out straight from the grill. Either way, these wings are delicious.
