    LOH MAI KAI ( Chicken in Glutinous Rice)

    List of Ingredients




    Loh Mai Kai is usually eaten as breakfast. You can buy them from Chinese Coffee Shops here in the East.
    Loh Mai Kai comes in a small sized pie foil ( The disposable sort of mini pie plates with a size of 10cm diameter). The actual size doesn't matter. It's up to the cook.

    You'll need:

    450gms of glutinous rice
    5 chinese mushrooms (The mushrooms can be purchased from Chinatown or any chinese grocery shop. They are sold in dried form.)
    1/2 chicken
    2 tbsps soy sauce
    2 tbsps oyster sauce
    2 tsps sesame oil
    1 tbsp sugar
    1/4 tsp pepper
    7 tbsps oil
    100 gms roast pork
    225 gms fresh pork
    1 tbsp cornflour
    Salt to taste

    Soak glutinous rice overnight. Rinse and drain well.

    Soak mushroom and cut in half.

    Cut chicken in bite size pieces. Season with 1/2 tbsp thin soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil and 1 tsp sugar.

    Slice roast pork into 1 cm cubes and season with 1/2 tbsp soy sauce, 1/2 tsp thick soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil and remaining pepper and sugar.

    Heat 2 tbsps oil and fry chicken until cooked and all the gravy absorbed. Remove and set aside.

    Heat another 2 tbsps oil, add in pork and toss for a munite.

    Add mushroom and 1/4 cup of water. Simmr for 10 minutes.

    Blend cornflour with 1/4 cup of water and thicken the gravy. Set aside.

    Mix glutinous rice with 3 tbsps oil, 1 tbsp soy sauce, 1/2 tbsp sugar and 1/2 tbs salt.

    Divided chicken, roast pork, fried pork and mushroom into 10 equal portions. Place each portion into a bowl.

    Divide rice into 10 equal portions, and cover the ingredients of each bowl with 1 portion of rice. Each bowl should only be 1/2 full.

    Steam them in a steamer for 30 munites or until rice is well cooked.

    To serve turn the bowl of rice onto plate. I like my Loh Mai Kai with Chilli/ tomato sauce.
