    6 frozen hash brown patties
    1/2 cup grated or shredded co-jack cheese
    1/2 cup bell pepper, chopped
    1 bunch green onions, chopped (including some of the “green”)
    1 cup diced ham
    10 eggs
    1 – 8 oz. pkg. cream cheese
    Salt and pepper (to taste

    Lightly grease bottom and sides of baking dish*. Crumble hash brown patties in bottom of baking dish. Sprinkle shredded cheese on top. Bake at 375º for 10 minutes. While potatoes are in the oven put cream cheese in mixing bowl and microwave until very soft. Set aside to cool a little. Remove potatoes from oven – top with peppers, onions and ham. Combine eggs, cream cheese, salt and pepper. Whisk until well mixed. Cream cheese will not totally mix with the eggs. Pour on top of potato crust. Bake at 375º until set – about 25-30 minutes.

    *The baking dish I used measured 8x11 so mine was a little thicker than if I had used 9x13. I think if you were using a 9x13 pan it wouldn’t need to bake quite as long. .................................
