    Chicken Spinach Artichoke Casserole

    2 pkgs (10 oz. each) frozen chopped spinach, thawed and squeezed dry
    1 can (13 ¾ oz.) artichoke hearts, drained and chopped
    ½ c. heavy cream
    1 cup shredded mozzarella
    1/8 tsp. salt
    1/8 tsp. coarsely ground black pepper
    2/3 c. grated Parmesan cheese
    1 pkg. (8 oz.) cream cheese, softened
    1c. whole milk
    (cooked chicken)

    Recipe

    Preheat oven to 350 F. In a bowl, combine spinach, artichokes, cream, mozzarella cheese, salt, pepper and 1/2 of Parmesan cheese.

    In a small bowl, with mixer at medium speed, beat cream cheese until fluffy, occasionally scraping bowl with rubber spatula. Reduce speed to low; gradually add milk, mixing just until blended.

    Spoon spinach mixture into shallow casserole. (Add chicken.) Pour cream cheese mixture evenly over spinach mixture. Mix slightly to wet the spinach. Sprinkle with remaining Parm. cheese. Bake 25- 30 minutes until edges bubble and top is golden.
