Chicken & Broccoli Alfredo

List of Ingredients
1 lb boneless, skinless checken breasts, cut into 1" pieces
1 large onion, chopped
4 cups of broccoli florets
1 can (14.5 oz) petite diced tomatoes, drained
1/4 cup reduced fat scallion and chive cream cheese
1 tbs plus 1 tsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 tbs corn starch
1/2 tsp thymeRecipe
Heat 1 tbs oil in a large non0stick skillet over medium high heat. Add chicken and cook for 4 minutes or until browned. Remove chicken from skillet.
Reduce heat to medium and add 1 tsp oil, onion and 1/4 tsp of salt and pepper and cook for 5 minutes or until softened. Add cornstarch to pan and cook 1 minutes, stirring. Add broccoli, thyme and 1/2 cup water to skillet. Cover; cook for 4 minutes or until broccoli is crisp-tender.
Remove cover and add chicken, remaining 1/4 tsp salt, tomatoes and cream cheese to pan; stir until well blended. Serve over rice.
