Creamy Spinach Dip Casserole

10 3/4 ounces cream of chicken soup
4 ounces light cream cheese, cubed (I let my cream cheese soften about an hour instead of cubing it.)
1/4 cup 1% milk
1/4 cup grated parmesan cheese
2 cups herb-seasoned stuffing cubes
10 ounces frozen chopped spinach, thawed and squeezed dryRecipe
1. Preheat oven to 350. Spray 1-quart baking dish with cooking spray. (I didn't have a 1-quart dish, so I used 4 7-ounce baking dishes instead (part of my French White set).)
2. In large mixing bowl, beat soup, cream cheese, milk, and parmesan cheese until blended. Fold in remaining ingredients. I also threw in a generous dash of nutmeg (a la Rachel Ray.
3. Spoon into prepared baking dish(es). Bake, uncovered, at 350 for 35-40 minutes (I left my minis in only 30 minutes) or until heated through
