Sausage, Sauerkraut and Potatoes

1 pound kielbasa
1, 7.6 ounce package garlic flavored mashed potatoes mix
1 1/2 cups sauerkraut
1/2 cup shredded Cheddar or Mozzarella cheese
Recipe
Preheat oven to 350 degrees F. (175 C). Bring a large pot of
water to a boil. Simmer kielbasa for 8 minutes to reduce fat.
Prepare mashed potatoes according to package direction.
Cut kielbasa in 4 equal portions. Split each, lengthwise,
almost all the way through so they lie flat. Pour sauerkraut in
bottom of baking dish. Place kielbasa on top of that. Spread
potatoes on top of that and then sprinkle with the cheese.
Bake for 10 -12 minutes, until heated and cheese is melted.
Makes 4 servings.
