New England Winter Chili

List of Ingredients
1.5 pounds lean ground beef
2 cans (15oz) pinto or kidney beans
2 cans (15oz) diced tomatoes
1 can (6oz) tomato paste
1 chopped yellow onion
1 chopped green pepper
1 chopped red pepper
2 chopped chile peppers or jalapenos (take the seeds out!)
4 beef bouillon cubes
1/2 cup beer!!
3 stalks chopped celery
1 teaspoon salt
1 teaspoon pepper
3 tablespoons chili powder
1 tablespoon worcestershire sauce
1 tablespoon minced garlic
2 teaspoons cumin
1/2 teaspoon cayenne pepper
1 tablespoon oregano
1/2 teaspoon basil
1 teaspoon brown sugar
1 teaspoon cinnamon
Recipe
In a large dutch oven, brown the meat over medium-high heat
Drain off any excess fat.
Add the pinto beans, diced tomatoes and tomato paste to the meat
Add the onion, celery, regular peppers, hot peppers, beef bouillon cubes and the beer
Mix
Season the mixture with the chili powder, worcestershire sauce, garlic, cumin, cayenne pepper, oregano, bay leaves, sugar, cinnamon and finally, the salt and pepper
Mix everything well, cover and simmer over low heat for 3 -4 hours
Be sure to occasionally stir to blend all the flavors well
Serve topped with fresh chopped green spring onions, sour cream, shredded reduced fat cheddar cheese and a bit of cilantro.
