    Baked Salmon with Pecan Coating

    Makes 4 servings


    List of Ingredients


    • 2 tbs Dijon mustard
    • 2 tbs melted butter
    • 4 tsp honey
    • 1/4 cup fresh bread crumbs
    • 1/4 cup finally chopped pecans
    • 2 tsp chopped parsley
    • 4 (4-6 oz.) salmon fillets
    • Salt and pepper
    • Lemon wedges


    Instructions


    1. Mix together mustard, butter and honey in a small bowl; set aside.
    2. Mix together bread crumbs, pecans and parsley in a small bowl; set aside.
    3. Season each fillet with salt and pepper. Place on lightly greased baking sheet or broiling pan.
    4. Brush each fillet with mustard honey mixture. Pat top of each fillet with bread crumb mixture.
    5. Bake at 450 degree for 10 minutes per inch thickness or until salmon just flakes when tested with a folk.
    6. Serve with lemon wedges.
