    Butter BBQ Shrimp

    1/2 Cup Butter
    1/2 Cup Chopped Green Onions (1 Bunch)
    1/2 Cup Ketchup
    1/2 Cup Water
    1 TBLS Worcestershire Sauce
    2 Tsp Grated Lemon Peel (optional)
    1 Tbls Lemon Juice
    1 Tbls Sugar (can use Splenda or Equal)
    2 Tsp Dry Mustard
    1-3 lbs uncooked Jumbo or Giant Shrimp, peeled etc

    Recipe



    1. Melt butter; stir in onion, ketchup, water, worcestershire sauce, lemon peel, lemon juice, sugar and mustard. Simmer approx 5 min.

    At this point you can cook 1 of 2 ways...
    1. Thread shrimp on bambook skrewers (that have been soaked in water for about an hour). Place shrimp in shallow glass dish. Pour marinade over shrimp. Let stand at room temp (covered with plastic wrap) one hour or refrigerate overnight. Broil 4-5 inches from source of heat about 5 min on each side. Bush with more sauce. OR

    2. The way I do it, is to put the shrimp into cooled sauce place in grill basket, being sure the shrimp are large enough not to fall through and line the basket with tin foil and poke holes in it, place in basket and cook approx 5-10 min on each side. Can brush with more sauce and good with Hot Rice as a meal or place on serving tray for appetizers. Serves approx 4-6.
