Black Bean Tortilla Bake

List of Ingredients
1 clove garlic, minced
1/2 c. onion, chopped
1 c. tomato, chopped
1/2 c. green onion, chopped
1/2 tsp. chili powder
2 tsp. cumin
1 (8 oz.) can tomato sauce
1 (16 oz.) can black beans, rinsed and drained
1 Tbs. cilantro, chopped
Coarse salt & fresh ground pepper, to taste
12 soft gluten free corn tortillas
8 oz. reduced-fat cheddar cheese, shredded, reserve 2 Tbs. for topping Recipe
Preheat oven to 350°F. Spray a large skillet with cooking spray. Cook garlic, onions, tomato, green onion, cumin, and chili powder over medium heat, until onion is tender. Add tomato sauce and cook 5 minutes more. Stir in beans, cilantro, salt & pepper. Spray a 9x9 inch baking dish with cooking spray. Begin layering 4 tortillas, 1/3 cheese, and 1/3 of the bean mixture; repeat until ingredients are gone. Bake 20 minutes covered. Uncover baking dish, top with reserved 2 Tbs. cheese; bake 10 more minutes or until bubbly. (Serves: 4)
