    • 1 cup butter
    • 3/4 cup packed brown sugar
    • 1/4 cup sugar
    • 1 (3 1/2 ounce) package vanilla instant pudding mix
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 2 1/4 cups gluten-free flour, mix (I use Bette Hagaman's Featherlight Flour Mix.)
    • 1/2 teaspoon xanthan gum
    • 1 teaspoon baking soda
    • 2 cups semi-sweet chocolate chips

    Featherlight Mix - from Bette Hagman's Gluten Free Gourmet Bakes Bread

    1 c. Rice flour
    1 c. cornstarch
    1 c. tapioca starch
    1 Tbs. potato flour (NOT potato starch)
    Mix well.

    Recipe



    1. In mixing bowl, cream butter, sugars and pudding mix.
    2. Add eggs, one at a time, beating well after each addition.
    3. Beat in vanilla.
    4. Gradually add flour mix, xanthan gum, and baking soda.
    5. Stir in chocoate chips.
    6. Drop by rounded teaspoonfuls 2 inches apart onto parchment paper lined cookie sheet.
    7. Bake at 350 for 8-10 minutes.
    8. Remove to wire racks and let cool.
    9. Enjoy!
