Red Beans and Rice

List of Ingredients
1 tbs olive oil
1 small onion, finely chopped
1 samll green pepper, finely chopped
1 rib celery, thinly sliced
3 cloves garlic, minced
1 1/2 tsp Cajan seasoning (such as McCormicks)
1/2 tsp dried oregano
1/2 tsp thyme
1/2 lb dried red kidney beans, rinsed and picked over
1 large chicken bouillon cube
3 c water
1/2 lb light kilbassa, cut into 1/4 inch half moons
1/4 tsp black pepper
3 c cooked rice
Recipe
Heat oil in medium size skillet over medium-high heat. Add onion, green pepper and celery. Cook siring for 7 minutes. Add garlic, cook 1 minute.
Scrape contents of skillet into slow cooker. Add Cajun seasoning, oregano, thyme, beans, bouillon cube and water. Cook for 3 1/2 hours on HIGH or 5 hours on LOW or until beans are soft.
Stir in kielbasa and black pepper. Cook until heated through. Serve over rice.
