Brined Pork Loin Roast

List of Ingredients
3 cups water
1/4 c packed brown sugar
1/4 cup kosher salt
1 12 oz bottle of beer
6 whole peppercorns, lightly crushed
2 whole allspice, lightly crushed
2 thyme sprigs
1 (2 lb) boneless pork loin roast, trimmed
2 Tbs brown sugar
1/2 tsp black pepper
1/4 tsp salt
1 Tbs prepared mustard
Recipe
1. In a large bowl combine water, brown sugar, salt, beer, peppercorns, allspice and thyme. Stir until sugar dissolves. Place in a zip lock bag with the pork loin roast.
2. Marinate in the refrigerator 8 hours or overnight. ( I marinated it for 12 hours)
3. Remove pork from marinade and discard marinade.
4. Pre-heat oven to 325 degrees
5. Combine 2 Tbs brown sugar, ground pepper, 1/4 tsp salt and mustard in a small bowl. Evenly coat all sides of the roast with the mixture.
6. Heat a large skillet over medium high heat and spray with cooking spray and brown roast on all sides.
7. Place pork on a broiler pan coated with cooking spray. Bake at 325 degrees for 1 hour or until thermometer registers 160 degrees. Place pork on a platter, let stand 10 minutes before slicing.
8. Slice thin for sandwiches or thicker for entrée.
Sauce:
Mix 2 1/2 tbs prepared horseradish, 5 tbs sour cream and 1 tsp prepared mustard. Serve with pork on rolls.
